At a factory in Kansas City's East Bottoms, a conveyor belt spits out roughly 2,500 warm tortillas an hour. They're made from yellow, blue and red corn.

The yellow corn tortilla is so flavorful, says Marissa Gencarelli, it’s like, “corn punching you in the face.”

Marissa and her husband, Mark Gencarelli, launched their Yoli Tortilleria business about eight months ago. Marissa, who is originally from Mexico, wanted corn tortillas that were close to what she grew up eating.

We talk with a chef whose Midwestern childhood and Lebanese heritage come together on the plate at Cafe Sebastienne — and at a special Lebanese dinner at the museum. Then, a visit to a local tortilleria where they make corn tortillas the traditional way.

Burgers are a classic KC menu item.

"As a steak town, Kansas City has always had a lot of good burgers, too," Charles Ferruzza told host Gina Kaufmann on KCUR's Central Standard.

Whether diners prefer a thin or thick patty — or something meatless — local menus have plenty of options.

Ferruzza, along with fellow Food Critics Mary Bloch and Jenny Vergara, searched out the best burgers in and around Kansas City.

What's not to like about cheese? First of all, it's probably the one food item for which "ooey-gooey" was invented. (And if not, let's just say it was).

Whether you like it melted in a sandwich or by itself with a glass of wine or beer, cheese is having quite a moment in KC.

When it comes to food, everyone has a guilty pleasure.

According to KCUR Food Critic Jenny Vergara, it may be something that’s full of fat and calories. Or it could be a retro throwback (like spinach artichoke dip) or a childhood favorite.

It could also be something that you like but everyone else thinks is gross (who else mixed Hawaiian Punch and milk? Anyone?). Or maybe it's that one dish from a chain restaurant that you crave.

On a busy Sunday afternoon in Kansas City's East Bottoms, there are people lunching at picnic tables on a gravel lot outside of the Local Pig. Inside, just behind the deli counter, there’s a huge butcher’s block, where chefs and amateurs alike have gathered for a crash course.

“There's a pretty good mix of people in the class,” butcher Jimmy Spradlin says. “There's a young chef and then just some old rough and tumble redneck guy that's like, ‘I'm just here for the pork chops.’”

But today, they’re all here to make sausage.

President Donald Trump’s threats to disrupt trade with Mexico aren’t just concerning people south of the border. Each time Trump attacks the North American Free Trade Agreement (NAFTA), the executives at a 130-year-old railroad with headquarters in downtown Kansas City, Missouri, hold their breath. Like a lot of U.S. companies Kansas City Southern depends on cross-border trade.   

Kansas City Southern takes Midwestern corn and auto parts to Mexico, and hauls finished cars, car parts and household appliances like washing machines and refrigerators back.

Many Kansas Citians are familiar with hummus by now. Available at Costco and other area grocery stores, this chickpea puree has become as ubiquitous as guacamole.

Why is comfort food so … well … comforting?

“Carbohydrates,” said KCUR Food Critic Charles Ferruzza.

“I think comfort food is heavy, filling, fattening food that you know you probably shouldn’t be eating,” he told host Gina Kaufmann on Central Standard. “But if you’re sick or depressed or cold, it really hits the spot.”

For Food Critic Carmen Gramajo, though, it’s also the memories associated with those dishes.
